My friend Melissa told me about pumpkin butter awhile ago. IÂ found it at my health food store but it was $12 so of course I didn’t get it. I basically forgot about it until yesterday when I found myself in a different health food store that I had never been in before. This place, although small with less merchandise than my usual store, had some really great things — including Bauman’s Pumpkin Butter for $6! So I bought that, along with 2 boxes of Annie’s whole wheat mac and cheese in Alfredo and White Cheddar, and a bag of Sweet Potato CORN CHIPS. (All things IÂ shouldn’t eat because of my stomach, but I couldn’t resist!)
This morning for breakfast I opened the pumpkin butter and took a little taste. WOW. Tastes like pumpkin pie! I miced a spoonful into my Chobani Vanilla yogurt (my favorite yogurt) and the result was heavenly. (Thanks to Tiffany at Chobani for sending me samples!)
Seriously, with the combination of vanilla yogurt and pumpkin butter, I felt like I was eating pumpkin pie filling for breakfast. I am thinking the pumpkin butter will taste REALLY great on top of my Waffle French Toast next time I make it! How did I live without this?
