This weekend was an eventful one. The first bit of exciting news is that I got spin shoes! I went home to visit my mom and we went to a bicycle store in Queens (the same place we got my very first bicycle!) and the man there was so nice and knowledgable. They only had one pair of women’s cycling shoes, and although I am normally a 6 or 6.5 in shoes, I tried on the 7 (since that was all they had) and they fit perfectly!
I love the colors and the way they look. The man in the store installed the hook things for me, but I need to bring them to the gym and see where I like the positioning before I tighten them. Righty tighty.
I am so excited to try them out! I don’t know if I will be able to tonight because for the past 2 days my stomach has been burning in pain, and I also have some errands to run after work — one being a trip to the running store near my apartment so I have a gait analysis and get shoes that will be good for me.
Then the most exciting part of the weekend was on Sunday. I made Hungry Girl’s Big Apple French Toast Casserole (minus the apples) for the boy and I. It was the perfect treat after doing a 45 minute run and 10 minute walk! I never made french toast in the oven before so this was very new to me. The boy doesn’t have an electric mixer (neither do I) so I wasn’t able to get all the cream cheese as smooth as possible, but the chunks did make a delicious treat!
The smells flowing through the apartment during the 40 minute baking period were nothing short of heavenly. I treated us to real maple syrup for dipping (I used to sugar free/calorie free kind for the mixture). The boy tasted it… and LOVED it! He absolutely loved it. He was so surprised that all the ingredients were healthy (I used Pepperidge Farm light wheat bread at 45 cals per slice) and I could tell he geniunely loved it. Not only did he devour it, he kept telling me how great it was! I thought it was delicious at well, and a big thanks to Hungry Girl for the recipe! I do not like cooking but I LOVE making breakfast!
Here is one more picture for your enjoyment!

January 26, 2009 at 2:07 pm (16 years ago)ooooo this looks fantastic!! I am so happy you made it because it is definitely something I would like to try. I have never checked out this Hungry Girl person/blog/site? I probably should…
I loved my french toast this morning the best so far I think. Oh and I should say- I personally like to avoid using sugar in my “meals” since I love desserts so much and get it there…. but when I make pumpkin french toast for my boyfriend I usually add just a teaspoon of sugar/ maple syrup/ etc. to the batter to make a little sweeter.

January 26, 2009 at 2:08 pm (16 years ago)and cycling shoes?!? i have never thought of those either, but I wanted to switch gyms so that I could take a spinning class- are cycling shoes necessary or just a lovely advantage ?

January 26, 2009 at 2:20 pm (16 years ago)BHealthier – I actually added a packet of Equal to my french toast because my boyfriend likes things sweet as well and that is what he has in his apartment! As far as cycling shoes go, they provide an advantage because they enable you to work your calves as well as your thighs. In normal sneakers, while spinning, you ONLY work your thighs. They also provide a more controlled and overall better workout. They are definitely NOT necessary, but if you plan on doing it often, I think they are very worth it!

January 27, 2009 at 11:15 am (16 years ago)So glad you’re loving your chunky Barney Butter. I’m all out and not allowed to buy more until I finish off the 8 jars of Naturally Nutty I got for my birthday. ๐
Clip-in shoes are great for spin class! They really allow you to work the hamstrings as you can now pull-up on the pedals. Definitely tones the legs.
That breakfast looks delicious. I’m going to make French toast very soon. ๐
